Recipes- the yummy basics: potato salad & guacamole dip

We had a little potluck awhile back and these are my favorite get-togethers because ....well, besides not having to make the whole meal, it's nice seeing how others make the "simple" yummy foods!
Basic Potato Salad- from the Bakers
She said that they just threw this salad together, tasting as they went. The Russett potatoes can also be used, but they don't like the starchiness of them.
Gold and red potatoes (with skins)- amount varies depending on portion needed and size of potatoes.
Mayo
Yellow mustard (start with tsp and go from there)
Sweet pickle relish
S&P
Green onion
Wash and dice potatoes. Boil until done (al dente). Fork should insert smoothely without potato falling apart. Drain and cool potatoes then add rest of ingredients to taste, mix thoroughly and sprinkle with parsley. Refrigerate until ready to serve. The longer the salad sits, the better the flavor.
Steve's Guacamole
Avocados
Tomatoes
Green chilies (preferably roasted anahiems)
Onions
Salt to taste
The key to this recipe is the texture! Mash the avacados, grate the tomatoes, dice the onion, dice the green chilies and add salt to taste. You can make it more "salad like" by chopping everything chunkier. Save at least one avocado seed to put into the center to make it look pretty! Serve with favorite type of chips.

Recipes- Carolyn's Dip and Won-Ton Chips

Shhhhhhhhh......I'm passing on a SECRET recipe!! Our friend Carolyn made this up and it was such a hit that Carolyn's neighbor Tami passed it onto Housewife Tari and after asking for it NUMEROUS times, I finally got a copy and am sharing it just with you! I don't feel guilty about it because it's so DElicous, it has to be shared with the world!
Carolyn's Dip and Won-Ton Chips
1/2 round of Boursin Cheese
4 oz cream cheese
Big dollop (less than 1/4 cup) of sour cream
chopped green onion
REAL bacon bits
Small handful of shredded cheddar cheese
Mix together and heat in microwave a minute or two. (SOOOO good!)
For the chips:
Cut won-tons in half sideways to make a triangle.  Brush with butter and place on a cookie sheet.  Top with Parmesan cheese and bake at 350 degrees for about 5 minutes or less- keep an eye on them until they're slightly brown.
If you don't want to make the won-tons, you can serve the dip with any crackers (even veggies!).  Here's how Tari served it at our last Housewives' get together- with large, yummy crackers from Costco.

Recipes- Hands down...BEST Chile Verde Dip

A bunch of us got together to watch the Seahawks in the playoffs, and our friend Linda brought this YUM.MEE chip dip!  (It also tasted really good with the veggies).  Sorry the photo is not the best, but my hubby -who is the pickiest eater- said it's the best chile verde he's ever had!

Chile Verde Dip
Saute one large onion
3 cloves garlic
3 poblano peppers
5-8 tomatillos
add salt and pepper
1 tsp ground cumin
1/2 tsp ground coriander
Turn down heat and simmer until tender.  Transfer to a food processor and blend into a sauce.
